Margaret River Sauvignon Blanc 2006

Winemaker’s Notes:
The 2006 vintage was unseasonably cool and late, which produced fruit showing intense varietal flavours and excellent levels of natural acidity - optimal for Sauvignon Blanc. All fruit was harvested during the coolest time of the night with select parcels receiving an enzyme addition in the vineyard to encourage flavour and aroma extraction from the skins prior to crushing.

Winemaker’s Notes:
Our winemaking is unobtrusive in an effort to preserve classic flavors whilst building on them with subtle oak and lees stirring. The aim is to provide oak complexity and richness that is balanced and well-integrated with fruit characters. The wine spends up to 8 months in oak barriques, with 40% of the blend undergoing barrel fermentation. This introduces some very attractive oak flavors that are integrated yet subtle. The wine has not been through malo-lactic fermentation. The lees stirring provides a pronounced creaminess which enhances the texture and overall complexity of the wine.

Margaret River Shiraz 2004

Winemaker’s Notes:
The 2004 vintage was a warmer than an average growing season for Margaret River. Fruit for this wine was sourced from vineyards within the region; from Jindong in the north to the proposed Karridale sub-region in the south. This Geographic diversity provided layers of fruit complexity in the resultant wine due to the subtle climate differences between the vineyard sites. Picked in the cool of night, the fruit was directly crushed to rotary and static fermenters with cap management carefully controlled to maximize extraction of flavors and color without over-extraction. Once dry, the wine was pressed off the skins and transferred to barriques where malolactic fermentation was completed. The wine was racked every 3-months during an 18-month maturation period, with parcels kept separate to add complexity upon blending.
