Winemaker’s Notes
The grapes are destemmed and placed into stainless steel tanks for 9 to 10 days to undergo fermentation. Malolactic fermentation takes place naturally in the spring and the wines will be racked three to four times. Then the wines are aged separately in American oak barrels for six months before being blended and bottled.
